The best time to book a Caribbean getaway from the Northeast USA is definitely during the dead of winter. February in New York is brutal, and the weather in the Caribbean is beautiful. Dan and I booked six days at the Coconut Bay Beach Resort and Spa in St. Lucia.  

Coconut Bay Beach Resort and Spa is my very first all-inclusive vacation, and I am 100% hooked. From the moment we stepped off the plane, we were greeted by the welcoming people of St. Lucia. Our resort had a free shuttle that picked us up from the airport for a quick 5-minute ride to Coconut Bay.

This is Paradise…. 

When we arrived, our driver kindly unloaded our bags as the resort staff offered us cold drinks and towels and helped us check in. Our room wasn’t ready yet when we arrived, so we stopped by the buffet for a quick lunch before heading up to our room on the 4th floor. Our room was spacious with a king size bed, large closets, and a balcony that overlooked Harmony, the adults-only side of the resort.

Coconut Bay Beach Resort is split between a family-friendly Splash wing and an adults-only Harmony wing. There are 5 pools, 7 bars, and 9 restaurants, not to mention, a full spa, a gym, and numerous other amenities. The buffet style meals and unlimited drinks (alcohol included) are fantastic, and you will certainly get your money’s worth if you like to eat and drink! My favorite resort amenity is definitely the food. 

The resort provides excursions and incredible on-site experiences. Dan and I booked an excursion to the Caribbean side of the island through Edmund Tours on Friday and horseback riding on the beach on Saturday morning. There are also kayaks available to borrow, kite surfing lessons/ rentals, and wind surfing rentals. Honestly, just sunbathing, watching the waves, and making time for each of the pools, hot tubs, and specialty restaurants would make for a great vacation. Back at home in New York, it’s 27 degrees and snowing. I couldn’t be more thrilled that we picked Coconut Bay Beach Resort and Spa for our winter getaway.
